I just hosted an all girls weekend at my house and the theme was Fiesta.  There was about 17 of us …so I had many …many leftovers!   I did have to keep with the theme though and make something Mexican, kind of. 😉  The best part is, this turned out to be a wonderful dinner everyone loved and I didn’t have to go to the store or throw anything out!  A  Win…win recipe and had a blast doing it.

Eleven Layer – Deep Dish Mexican Pizza

1 Tube Pizza Dough

3 Large Flour Tortillas

2 Cups Refried Bean Dip (Leftover)

3 Cups Shredded Mexican Blend Cheddar Cheese

1 Cup Chicken Quesadilla Mixture ( Leftover)

1 Cup Taco Meat ( Leftover)

3/4 Cup Homemade Salsa ( Leftover)

Preheat oven to 450 Degrees.

On pizza stone or slightly greased cookie sheet, form your packaged pizza into a circle, making it about 2-3 Inches larger then your flour tortilla.

On cookie sheet place flour tortillas and bake in oven for about 5 minutes or until slightly crispy.  Take out and set aside.

On the pie crust, spread the re-fried bean dip evenly on the bottom of the pizza crust, about the same size as the flour tortillas, then sprinkle about 3/4 cup of the shredded cheese evenly on top.  Top with one of the crispy flour tortillas.  The next layer is the quesadilla mixture topped with another 3/4 cup of shredded cheese.  Then layer the taco meat, again topped with 3/4 cups shredded cheese and top with the last flour tortilla. The last layer is the salsa and the remaining cheese.

Take the edges of the pie crust and carefully drape up the sides of filling and place on the edge, folding crust evenly as possible to fit on top of pizza.  Bake for about 20-30 minutes or until browned and hot inside.  Tent top with foil if crust starts to brown to much.  Cut like a pie and serve.  Enjoy<3
