Skillet Chicken w/ Garlic Tomato Basil Sauce

An easy skillet recipe that is fit for company.  This chicken recipe is packed full of wonderful Italian flavors, that you will absolutely not get enough of.  Definitely a family meal that you will be asked to make over and over, easy on the wallet too!

Skillet Chicken w/ Garlic Tomato Basil Sauce

4 Pounds Bone- In Cut Up- Chicken Pieces

1 Packet Good Seasons Italian Salad Dressing Mix

Drizzle Olive Oil

2 Cups Chicken Broth

¼ Cup White Wine

3 Large Clove Garlic

1 Tablespoon Dried Basil

2 Tablespoons Tomato Paste

¼ Cup Cream

1 Tablespoon Butter

Season chicken on all sides, with the good seasons salad dressing mix.  Drizzle oil into a very large skillet. Heat up skillet and place chicken in skillet and cook until browned on all sides and cooked through, about 35-45 minutes on low.  Use a loose cover over chicken to help with cooking time.  Smaller chicken pieces will be done sooner.  When chicken is done, set on plate and set aside.

In the same skillet, add in sliced garlic and cook for about a minute.  Add broth, wine, basil and tomato paste into skillet, stir to combine and simmer to reduce, for about 10 minutes.  Wisk in cream that has been warmed (either slowly in the microwave or on low on the stove) and butter, continue to cook for another 5 minutes.  Place Chicken on platter then top chicken with sauce.  Serve.  Enjoy<3


I serve this chicken over rice.

Vegetable Basmati Brown Rice

4 Cups Chicken Broth

2 Cups Basmati Brown Rice

1 ½ Cups Frozen Vegetables (I used a mixture of California blend and corn)

Bring broth to boil in a medium size pot. Add in vegetables and rice, cover and simmer for twenty minutes.  Turn off heat after twenty minutes, fluff rice with fork.  Place rice on serving platter, place chicken on top of rice then pour over garlic tomato basil sauce.  Serve. Enjoy<3
