Everyone loves a healthy light salad during the summer, but get tired with the same old thing. Mix it up your next salad with an olive and cheese crouton!
Fried Olive Crouton Salad
10 Ounces Black Ripe Olives -Jumbo
2 Slice Bacon
2 Ounces Feta Cheese
3 Tablespoons Flour
1/2 Cup Panko Bread Crumbs
Olive For frying
5 Ounce Bag Spring Mix Salad Mix
1 Large Tomato- Sliced
Balsamic Dressing- Your Favorite
In a small skillet, fry bacon until crisp. Drain on paper towel and let cool. Crumble bacon into small pieces and mix with feta cheese. Taking the olives and stuff each olive with the bacon, feta mixture.
In 3 small bowls, one add flour, the next with egg- beaten and the last bowl add panko. Dip each stuffed olive into flour first then into egg then into panko to cover the entire olive. Continue until all olives are breaded in the same manner.
In deep fryer or in pan on the stove, fill with enough oil to cover olive. Heat up oil to 350 degrees. Fry each olive until golden brown (couple of minutes). Do in patches if necessary. Drain olives on paper towel.
Take lettuce and thoroughly wash and dry lettuce. Place lettuce in serving bowl, top with fried olives then sliced tomato, drizzle with the desired amount of dressing and serve. Enjoy <3
