Paprika Chicken & Veggie Skewers

Looking for a new way to do chicken at your next BBQ?  Here is a simple new way to dress your chicken and vegetables.  All the flavor is in the marinade, it’s that simple. Served over brown rice, you have yourself a wonderful tasting BBQ, and you would never even think something this good was healthy too!

For Marinade:

1/4 Cup White Dry Wine

1/4 Cup Vegetable Broth

2 Tablespoons Olive Oil

1/2 Teaspoon Thyme

1 Teaspoon Parsley

2 Tablespoons Tomato Paste

1/2 Teaspoon Garlic Powder

1/2 Teaspoon Onion Powder

1/2 Teaspoon Cumin

2 Teaspoons Balsamic

3 Tablespoons Sweet Paprika

Salt and Pepper To Taste

Mix all ingredients in a large bowl with whisk.  Cut up 4 chicken breast in about inch big pieces.  Place cut chicken in bowl, add half of the marinade, and set aside.

Meanwhile; In medium size pot, add in 4 cups vegtable broth, bring to boil add in two cups brown rice and simmer for about 20 minutes or until rice is tender.

2 Cups Brown Rice

Gather your favorite veggies and place on skewers.  I used:

10-12 Small Tomatoes

2 Green Peppers

4 Onions

2 Portabella Mushrooms

1 large Cooked Just Until Almost Soft- yam

Cut thoroughly washed veggies into pieces to fit on skewer.  Place full skewers on plate, then pour remaining marinade on top of each skewer.


 

Place chicken on skewers.  Place chicken and veggie skewers on a heated, greased grill. Cook for 4 to 5 minutes on each side or until the chicken are cooked through, but not over cooked and the veggies are tender.  Serve over cooked rice and enjoy!
