Portabella Egg White Omelet

I am not calling this a diet anymore…It is now officially, eating healthy!  A diet is when you feel deprived, I have’t really felt that way.  I still indulge in not so healthy meals, not as much though. I continue to dread the dreadmill.   It’s working to..I am down 6 Pounds!!!!

So my healthy breakfast this morning was a Portabella Egg White Omelet

I sliced 1 Large Portabella Mushroom.  I am into rustic cooking lately..I like big chunky ingredients.  I want to really know the ingredients I use they are there in a big way!

Placed the mushroom in a large skillet with olive oil and a sliced onion.

Cooked for 5 or so minutes, then added 3 small cut tomatoes.

Added the tomatoes to the skillet.

I separated 6 eggs.  Safe the yolks for something yummy you can indulge in, for another time.

Place your egg whites in a small skillet with a drizzle of olive oil.

Placed half of the mushroom mixture on top of the egg whites.

Guess what I put in next…CHEESE!  Eating healthy with CHEESE.  Look!

35 Calories!!!  THAT’S RIGHT!!

So In goes the CHEESE!  Yes I have laughed today!

Fold omelet over in half, continue to cook a couple of minutes or until egg is cooked through.  Makes two omelets, so go make another one for someone else, they are going to love it, and possibly you.  Serve.  Enjoy!
