I love having fresh home made ice cream, you know it has fresh ingredients with no additives. The ricotta cream leaves a slight, delicious tang that compliments the strawberries perfectly.  Making ice cream yourself gives it a special enough touch to serve to company, as seen in the picture as a tasting party, or right out of the container tastes even better!  I made this ice cream for my Mother and Mother in law, who both are amazing cooks and bakers.  They gave me two thumbs up and some suggests of course…. 😉 One suggestion being to cut the strawberries smaller, so now the recipe calls for the strawberries to be diced!

Ricotta Cream Strawberry Ice Cream 

1 1/2 Cups Fresh Strawberries- Diced

3/4 Cup Fine Sugar *

1 Teaspoon Fresh Lemon Juice

1 Cup Ricotta Cheese

1 Cup Heavy Cream

1/2 Tablespoon Vanilla


Mix strawberries, sugar and lemon in a medium sized bowl, then set aside.


In processor or mixer, whip ricotta cheese until smooth.

Combined strawberries and ricotta cream into a large bowl, then add vanilla.

Place mixture into an ice cream maker and follow manufacturer’s directions.  Freeze until desired consistency.  Serve.  Enjoy!

If you don’t have tapas or tasting dishes, improvise and use what you have…It makes a great presentation and a conversation piece.

* Run regular sugar in a food  processor to make fine sugar.
