Have you noticed the fruit this year is just so good!? Everything I have bought this summer has been sweet and wonderful, and I am not talking about a farmers market shopping either, I mean in the regular grocery store. So I have been enjoying natures culinary treats as much as possible! These tasty blueberries had a hard time getting on the tart instead of in my mouth!
Bella’s Blueberry Tart
1 Cup Graham Cracker Crumbs
3/4 Cup Newtons Fruit Thins -Blueberry Brown Sugar Flavor – Crushed
1/4 Cup Sugar
6 Tablespoons Butter – Melted
1 -8 Ounce Container Mascarpone – Softened
1/2 Cup Sugar
1 Teaspoon Vanilla Extract
1 Pint Blueberries
1 Cup Silvered Almonds
Mix all crust ingredients together in a large bowl. Press mixture evenly into the bottom and up the sides of a tart pan. Bake crust in a 350 degree preheated oven for 7-10 minutes or until slightly browned. Remove from oven and let cool.
Meanwhile, whip all filling ingredients together.
Fill tart evenly with the filling.
Top with almonds and blueberries. Chill, then serve. Enjoy!
