Summer panini nights is one of my favorite dinners. Sitting outside with family or friends, hopefully in my swimsuit and a glass of wine in hand. This panini hit the spot, packed full of flavor and some heat! This one will be on the top of my list of pinni to make again!
Italian Tomato Grilled Cheese Panini
Bread of choice
Roasted Red Pepper Pesto*
Cut bread in half, place tomatoes on bottom bread, top with provolone cheese, next add peppers, then place sliced mozzarella. Spread the top of the bread with desired amount of pesto.
With a grill ( indoor or outdoor) or panini maker, grill sandwich until all the cheese has melted in the middle. If using a grill, place foil over sandwich and weigh down with heavy object, turn over to grill both sides. Enjoy!!!!
* Roasted Red Pepper Pesto
12 Ounces Roasted Red Peppers – 2 Tablespoons of liquid in jar reserved
4 Cloves Garlic
1/4 Cup Slivered Almond
1/4 Cup Pecorino Romao cheese
1/4 Teaspoon Salt
1 Teaspoon Pepper
Place all ingredients into a food processer and mix until all the peppers and garlic have chopped down to a spreadable thin paste. Easy!
Makes enough for 4 sandwiches.
