I went on a picnic and I brought the most amazing Cranberry, Nut and Jalapeno Chicken Salad, very yummy Home Made Garlic, Sea Salt Bagel Chips with cheese, and a, oh so good Whipped Cream Raspberry Fizz! It has been a long time since I went on a picnic, and I am certainly going to do it again before the summer is over. Besides the great food, a picnic is about location…location……Location! I love being by the water, and lucky for me I live in the beautiful Town of Poughkeepsie, NY, right by the Hudson River. So it only makes sense for me to picnic by the river. We choose the Vanderbilt Mansion http://www.nps.gov/vama/historyculture/index.htm for our picnic spot. Not by the mansion, which is absolutely beautiful, (if you haven’t already, you should definitely visit) we drove down the hill, over the one car bridge, to the river bank. It was so relaxing, sitting by the water and chatting with people who strolled by. Most people were intrigued and inquired about what we were drinking.
So on that note, I will start with the Whipped Cream Raspberry Fizz
2 Cups Frozen Sweetened Raspberries
3 Shots Whipped Cream Flavored Vodka- Or More
Prosecco – Or your favorite champagne
Place raspberries, vodka and enough water to allow the mixture to blend. Pour desired amount of raspberry sauce into glass, add the desired amount of champagne. Enjoy!
Hubby had a couple of sips only…He was the driver!
Hubby must have told me at least three times how good everything was! So Sweet!
Cranberry, Nut and Jalapeno Chicken Salad
3 Cups Cooked Chicken
1/2 Cup Dried Cranberries
1/2 Cup Slivered Almonds
2 Tablespoons Fresh Parsley- Minced
1 Stalk Celery- Diced
1 Jalapeno – Diced- Seeds in if you like a little heat
1/2 Cup Mayonnaise
1/2 Cup Plain Yogurt
Salt and Pepper to Taste
In large bowl mix all ingredients together. Place on your favorite bread, we used sliced Italian bread. Line both sides of bread with lettuce, so the bread doesn’t get mushy from the chicken salad (we used romaine). Enjoy!

Home Made Garlic, Sea Salt Bagel Chips
2 Bagels- Sliced Thin
Drizzle Olive Oil
2 Cloves Garlic
Pinch Sea Salt
Preheat oven to 350 degrees.
Take sliced bagels and place them in a single layer onto a cookie sheet Brush lightly with olive oil on each side. Bake for 8-10 minutes or until lightly brown. Remove from oven, while still warm rub garlic on one side of each bagel slice, sprinkle with sea salt and let cool. Enjoy!

After we ate, we walked around and noticed on the rocks there were names and dates etched into the rocks. 1915 was the oldest date we saw, and it was worn so deep into the rock. It seems to be the place many couples put their names and dates, it’s was very sweet to see all the names scattered all over. It reminds me of Italy, where couples put their names on a padlock and hang it on a fence, gate or bridge, which symbolizes that they will have everlasting love. Very romantic. So when in Rome…I mean Dutchess County….
Hubby etched our names too, in time our names will get deeper into the rock. There is symbolism there for me!
