Sweet Potato Salad 

Summer is winding down, which is a sad state of affairs for me!  I just love summer!  I am always looking for new ideas for recipes.  Here is a potato salad I came up with last weekend, that everyone loved!  I will make it as much as I can, until the last of the warm weather and maybe longer….. :)

4-5 Sweet Potatoes

1 Stalk Celery- Diced

3/4 Cup Raisins

1  Tablespoon Fresh Thyme

1/2 Teaspoon Salt

1/4 Teaspoon Pepper

1 Cup Mayonnaise

1/4 Cup Sour Cream

Peel and cut potatoes into bite size pieces.  Place in a large pot of cold water, bring to boil, cook potatoes until  just tender.  Drain and let cool.

In a large bowl add all the ingredients then mix together.  Add in cooled sweet potatoes, careful mix together until all the potatoes are covered with mayo mixture.  Place in refrigerate until cold.  Serve and Enjoy!
