Upstate Apple Baby Backs

 

Truth be told, I am not a fan of BBQ sauce, it’s usually too sweet for me!  I am mission to make a BBQ sauce I like.  But in the meantime I came up with a rib of a different flavor!  My mother in law was with me while I came up with this recipe, she gave me two thumbs up, which is a definite compliment!  Give them a try and you tell me if you give them two thumbs up….

Upstate Apple Baby Backs

RUB:

¼ Cup Dried Apples

2 Tablespoons Dark Brown Sugar

1 Tablespoon Rosemary

½ Tablespoon Cinnamon

½ Tablespoon Thyme

1 Tablespoon Garlic Powder

1 Tablespoon Paprika

¼ Tsp Cumin

2 Tablespoons Salt

1 Tablespoon Pepper

2 Racks of Baby Back Ribs

Apple Chips

Sauce:

12 Ounce Apple Jelly

1/2 Cup Pinot Grigio

2 Teaspoons Spicy Brown Mustard

8 Dashes Hot Sauce

1 Teaspoon Dark Brown Sugar

Pinch Cinnamon

Pinch Paprika

Preheat oven to 325 Degrees.

Remove silver skin from the back of the ribs.

Grind dried apples, then rosemary, mix together all rub ingredients.  Evenly coat ribs with rub mixture.  Wrap ribs in foil, place wrapped ribs on cookie sheet. Place ribs in oven for 4 hours..

In a small sauce pan, on medium low, simmer all sauce ingredients together for about 5 minutes.

Remover ribs and let cool enough to handle.  Remove liquid from foil. Brush ribs with sauce and place under the broiler to brown.  Flip ribs carefully, so they don’t  fall apart and brush sauce on and brown the other side.  Remove from oven and serve.  Enjoy!
