Pan Crisp Pesto Potatoes w/ Scallions
2 Tablespoon Butter
1/3 Cup Olive Oil
4 Large Baking Potatoes
Salt and Pepper to Taste
1/3 Cup Pesto- Your Favorite
Wash and dry potatoes, then pierce each potato with a fork. Cook potatoes in a microwave for about 10 Minutes. Cut potatoes into bigger then bite size wedges. Place butter (which helps the browning) and oil in a large frying pan on medium low heat. When oil is hot, cook potatoes on all sides until brown, let potatoes brown on each side before turning, to make sure potatoes are crisp and won’t fall apart.
Sprinkle scallions on top and serve. Enjoy!
