It has been a little chilly and rainy here in NY, which had me thinking of comfort food! This is not Italian, but still screams comfort and Delicious! I made this for myself, Hubby and kids are not home, so I wanted something quick and easy that I could curl up in my chair with.
Easy Chicken and Dumplings
2 Large Boneless Chicken Breast
Salt and Pepper To Taste
1/4 Cup Flour
1 Onion- Diced
1 Celery Stalk- Diced
2 Carrots- Sliced
2 Cups Chicken Broth
Cut chicken breast into bigger then bite size pieces, then salt and pepper to taste. Dredge chicken pieces into flour coating well.
In large skillet on medium high heat, add olive oil and sear chicken pieces on all sides, but not cooked through. Remove chicken and set aside. Add more oil if necessary, lowering the heat to medium, saute onions, celery and carrots until just turning soft, salt and pepper vegetables to taste.
Add broth and chicken into pan, lower heat to simmer. Prepare dumplings according to package instructions. Dollop mix on top of broth around pan. Cover loosely with foil and let simmer 15-20 minutes. I like to flip my dumplings over and cook on both side , which I know is not conventional and or southern at all, but to each her own!! Sprinkle with parsley and serve (which I forgot to do)! Enjoy!
