Chicken Pineapple Skewers W/ Pineapple Chutney

Getting in the kitchen and coming up with a meal with what you have in the house is always a fun challenge for me.  Add the help of my daughter and it becomes a wonderful memory!  What a fun time we had coming up with this delicious meal that the whole family enjoyed. I (we) will certainly make this again.  I see company in my near future!

Chicken Pineapple Skewers W/ Pineapple Chutney 

2-3 Large Boneless Chicken Breast

1 Fresh Pineapple

White Balsamic Dressing- Your favorite

1 Small Onion- Diced

3/4 Cup Small Diced Tomatoes

1 1/2 Cup Small Diced Pineapple

I Tablespoon Fresh Parsley= Finely Chopped

1 Tablespoon Fresh Basil- Finely Chopped

Salt and Pepper to Taste

2Tablespoon Olive Oil

5 Ounces Spring Mix Lettuce

Cut chicken and half the pineapple into about 1 inch bite size pieces.  Place on skewers and marinate with dressing in shallow dish for about a half hour or longer.

Add the remaining ingredients except spring mix Lettuce in a medium bowl.  Mix together and refrigerate.

On a hot outdoor grill, set on medium heat.  Grill skewers on all sides for a minute or so on each side, or until the chicken is cooked through.  Remove from grill.

Wash and dry lettuce, place on serving platter.  Top lettuce with skewers, then top skewers with Pineapple chutney.  Serve.  Enjoy!

Serve extra balsamic dressing on the side if desired.
