Happy Fourth Of July!

It’s all about the Red, White and Blue!  I had so many plans up in the air, invited to so many different Fourth of July celebrations.  We had local parties, which one to pick…go to both, maybe?  A chance to spend the celebration in Maine with friends, Very tempting!  Well turns out my Honey has to work, so I will hang home and quietly celebrate what the forth truly is about.  Then host a small intimate gathering over the weekend to spend quality time with friends.

I am known for my big bashes, scaling it back to a small gathering, I going to not only put my fancy pants on; but pulling out my swanky hankie and adorning my posh socks…    Here are a few recipes that I will be serving.

Potato, lobster Blue Mashed w/ Beet Sauce

Beet Sauce:

2 Beets

1 Clove Garlic

Salt and Pepper to Taste

1 Tablespoon Butter

Potatoes:

4 Small White Potatoes

4 Small Purple Potatoes

3 Tablespoon Butter

Splash Milk

Salt and Pepper to Taste

1/2 Pound Cooked Lobster –Cut in small chunks

Puree beets that have been peeled.  I juiced my beets, it worked well.  Place beets in small sauce pan; add in garlic and salt and pepper.  Simmer for a couple of minutes to reduce slightly, add in butter, to form a glossy sauce.

In large pot, place potatoes and enough water to cover potatoes, bring to boil. Cook until potatoes are soft.  Let white potatoes cool slightly.  Meanwhile peel purple potatoes, whip in butter, milk, salt and pepper with mixer or masher.  Fold in lobster.

Peel white potatoes, cut potatoes in a ¾ of an inch think rounds.  In a small plate or tasting plate, place strained beet puree.  Place a white potato round, top with a dollop of purple lobster mashed potato using a piping bag or plastic bag with a hole cut out from the corner.  Serve.  Enjoy!

Makes about 8 small bite serving Serves 4

The Italian Shooter

Place desired amount of raspberries and blueberries in shooter glasses, add a shot of Limoncello and fill with Prosecco.  Enjoy!

The Salad Of The Fourth

1 Cup Fresh Bluesberies

1 Cup Grape Tomatoes- Sliced

1/2 Cup Crumbled Feta Cheese

2 Tablespoons White Balsamic Vinager

Mix all ingredients in bowl.  Place in small bite serving dishes and serve.  Enjoy!
