Chicken Summer Stew

Are you a stew lover?  I certainly am!!!!   Well I am a stew, soup, bisque, chowder, gazpacho  and a pot roast fan!!!!   OK … I know…. I love … Love Food… All Kinds!   As a summer fan, and the wanting to utilize what my garden supplies, I came up with …..Summer Stew.

Chicken Summer Stew

3 Large Boneless Chicken Breast – Cut Into Bite Size Peices

S&P To Taste

1/4 Cup Flour

3 Tablespoons Olive Oil

1 Large Onion – Sliced

1/3 Cup Dry White Wine

3 Cups Cut Zucchini

1 Cup Roasted Red Peppers – Chopped

3 Cups Chicken Broth

1/4 Cup Fresh Basil Leaves

2 Cup Fresh Tomatoes – Chopped

Take chicken and season with salt and pepper.  Coat chicken with flour. In a Large Pot, on medium high heat, with olive oil, lightly brown chicken on all sides, cooking in batches as not to over crowd pan.  Set chicken aside.

Cook sliced onion on medium heat until just turning soft ( 2-3 Minutes).  add in zucchini and peppers and cook a couple of minutes, stirring occasionally.  Add white wine and reduce by half.  Add to pot, tomatoes, broth, basil and the chicken, season with salt and pepper.  Simmer for 15 -20 minutes or until chicken is just cooked through and not over done.  Serve.  Enjoy!
