I can not believe I have never shared this recipe before now!  This is one of my first tried and true recipes that I have been making for years and years!  My Mother still gets excited when she hears this soup is going to be on the menu.

Corn Chive Chowder

1/4 Cup Olive Oil

1 Onion- Diced

2 Stalks Celery- Diced

2 Carrots- Diced

3 Cloves Garlic- Diced

1/4 Cup Flour

3 Cups Chicken Broth

3 Cups Unsweetened Almond Plus™ 5X

2 Large Potatoes-Peeled and Diced

4 Fresh Corn on the Cob- Corn Cut off Cob

2 Cans Cream Of Corn

1 Teaspoon Dry Dill

2 Tablespoons Fresh Chives- Diced

2 Tablespoons Dry Sherry

Salt and Pepper to Taste

In a medium pot on medium-low heat add  oil, saute onion, celery, carrots and garlic for 4-5 minutes or until vegetables start to soften.  Add in corn, cook another minute stirring occasionally.  Stir in flour, continue to cook another couple of minutes stirring frequently.  Pour in broth,Unsweetened Almond Plus™ 5X, add one cob that the corn was removed from and the remaining ingredients,  Simmer for 20-30 minutes.  Remove cob from pot and serve.  Enjoy!

*Corn on the cob can be substituted with frozen corn
