Cream of Spinach Soup

I love to come up with recipes with what I have in the house, it’s a little challenge I have fun with and most times I come up with great new recipes.  This is one successful new recipe.

Cream of Spinach Soup

6 Slices Of Bacon

1 Onion – Diced

2 Carrots – Diced

2 Stalks Celery – Diced

2 Cloves Garlic – Minced

4 Potatoes – Cut into smaller then bite size pieces

6 Cups Chicken Broth

Salt and Pepper To Taste

1/2 Teaspoon Red Pepper Flakes

1 Pound Bag Fresh Baby Spinach

1 Cup Heavy Cream

In a large sauce pan cook bacon until crispy, remove bacon, drain on paper towel and set aside.

Cook onion, carrot, celery and garlic in bacon fat on medium heat until vegetables are starting to soften, stirring often.  Place in bacon that has been cut into small pieces and the remaining ingredients, except cream.   simmer soup for 20 minutes, stirring occasionally. Add in cream and simmer for another couple of minutes.

Sprinkle with pecorino romano cheese if desired.  Serve.  Enjoy!
