Mac & Cheese Garlic, Parmesan Fries
1 Pound Small Size Pasta – I used mini shells
1 Cups Shredded Cheddar
1 Cup Shredded Gruyere
2 Cloves Garlic
½ Cup Panko Bread Crumbs
½ Cup Italian Style Bread Crumbs
1 Tablespoon Olive Oil
4 Cloves Garlic- Diced
2 Tablespoons Dried Parsley
Salt and Pepper to Taste
Vegetable Oil for Frying
2 Tablespoons Grated Parmesan Cheese
In a large pot of salted boiling water, cook pasta according to package directions.
Grease a 15 – 10 inch baking dish. Drain pasta return to pot; add cheese and bacon that has been cut into small pieces. Cook on low heat until cheese melts, stirring constantly. Pour mixture into baking dish, smooth to an even layer. Top with plastic wrap pushing down to compact mixture and refrigerate to cool.
Once cooled, cut macaroni and cheese into steak fry size fries.
In one bowl mix eggs, in another bowl mix bread crumbs. Dip fries into egg then coat with bread crumb mixture. In a deep fryer or frying pan with oil for frying, fry fries until slightly brown on all sides. Fry in batches not to over crowd pan, drain on paper towel.
In a small fry pan add oil, garlic, parsley, salt and pepper, cook for a couple of minutes, do not let garlic brown. Remove from pan. Sprinkle fries with garlic mixture then with parmesan cheese and serve. Enjoy!
