Vanilla Honey Ice Cream w/ Blueberry Balsamic Swirl and Sea Salt
2 Cups Half and Half
½ Vanilla Bean, Split
¼ Cup Good Quality Honey
3 Egg Yolks
Blueberry Balsamic Swirl:
2 Tablespoons Balsamic Vinegar
½ Cup Frozen Blueberries
1 Tablespoon Good Quality Honey
Pinch Himalayan (pink) Sea Salt – Can use regular sea salt
Place half and half in a heavy medium saucepan, add in vanilla bean and honey, bring to simmer and remove from heat. In a medium bowl whisk egg yolks and gradually whisk milk mixture into yolk mixture. Place mixture back into sauce pan. Stirring constantly over low heat, bringing custard to a simmer until custard thickens. Strain mixture and chill.
In small sauce pan add balsamic, blueberries, and honey, cook on low, stirring occasionally until blueberries are broken down, about 4-5 minutes. Chill.
Place ice cream in an ice cream maker and follow direction to make ice cream for your machine. Place in container and set in freezer. Before completely frozen take swirl and with a butter knife swirl blueberry mixture into ice cream. Freeze.
Place desired amount of ice cream into a bowl, sprinkle with a sea salt and serve. Enjoy!
