Corn and fresh chives are a their peak!  I think it’s a good time to enjoy a bowl of soup!  Perfect for a rainy day!

Corn Chive Chowder

1/4 Cup Olive Oil

1 Onion- Diced

2 Stalks Celery- Diced

2 Carrots- Diced

3 Cloves Garlic- Diced

1/4 Cup Flour

6 Cups Chicken Broth

2 Cups Heavy Cream

2 Large Potatoes-Peeled and Diced

4 Fresh Corn on the Cob- Corn Cut off Cob

2 Cans Cream Of Corn

1 Teaspoon Dry Dill

2 Tablespoons Fresh Chives- Diced

2 Tablespoons Dry Sherry

Salt and Pepper to Taste

In a medium sized soup pot, on medium-low heat, add oil.  Saute onion, celery, carrots and garlic for 4-5 minutes or until vegetables start to soften.   Stir in flour, continue to cook another couple of minutes stirring frequently.  Pour in broth, cream,  one cob that the corn was removed from and the remaining ingredients,  Simmer for 20-30 minutes.  Remove cob from pot and serve.  Enjoy!

*Corn on the cob can be substituted with frozen corn
