Pappardelle Alfredo Ham and Peas

2 Cups Flour

1 Teaspoon Salt

3 Eggs

1 1/2 Tablespoon Olive Oil

Alfredo:

1 Stick Butter

1 Cup Heavy Cream

1/2 Cup Milk

6 Ounces Parmesan Cheese

1/2 Teaspoon Salt

1 Tablespoon Pepper

1 Bag Frozen Peas

1 Ham Steak- Diced

Mix flour and salt together, on counter or board place flour and make a well.  place eggs and oil into well and mix eggs and oil together.  Start incorporating flour a little at a time while mixing, until all flour has been mixed in.  With the heal of your hand kneed bread until smooth.  Wrap in plastic wrap and refrigerate for at least an hour.

Cut dough into 4 sections, working with 1 section at a time.  Either roll out dough until your desired thickness or pass through a pasta press rising the number after every pass through until you reach 7.  Flour pasta well and cut into about an inch and a half wide.

Meanwhile: In a large skillet place butter , cream, milk and salt.  bring to a slight simmer.

Cook pasta in salted boiling water for a couple of minutes or until al dente.  Place pasta and cheese into skillet with milk and mix to coat all pasta.  Mix in pepper and serve.  Enjoy!
