Lentil Cheese and Crackers

Thanks to to the Lentil Recipe Revelations Challenge, by Canadian Lentils. I have come up with the perfect appetizer for the lentil lover!  Lentil Cheese and Crackers.  There is nothing more common then cheese and crackers, but yet when you make your own crackers and stuff your cheese with lentils, you make it special!   Being Italian I can make a meal out of cheese and crackers!  I love to serve cheese and crackers as quests arrive, it’s a perfect meal starter.  Occasionally, I will make them as an appetizer for for friends before an evening out, it seems you went to a lot of trouble. Friends enjoy meeting for a glass of wine and a bite to get the evening started, this is my recipe of choose to make everyone feel welcome and special.  Anytime you serve Lentil Cheese and Crackers, your quests will feel special.

Lentil Cheese and Crackers

Cheese:

1 Tablespoon Olive Oil

1/4 Cup Onion

2 Cloves Garlic Garlic

1/2 Teaspoon Dried Parsley

1/4 Teaspoon Paprika

1/3 Cup Dried Whole Red Lentils

11/4 Cups Water

1/2 Pound Mozzarella Cheese

In a small sauce pan on medium, low heat cook onions and garlic until vegetables are starting to soften.  Add in all the remaining ingredients except mozzarella, and simmer for 10-13 minutes stirring occasionally.  Remove form heat and set aside, or refrigerate to cool.

Cut cheese to open it and flatten.   Spread a layer of lentils on top of cheese roll cheese to close and wrap tight with plastic wrap.  Place on microwave for about 35 seconds and smooth out cheese with hand over plastic and refrigerate to cool.

Crackers:

1/2 Cup Finely Ground Dried Whole Red Lentils

11/2 Cup Flour

1/3 Cup Parmesan Cheese

1/2 Teaspoon Dried Rosemary

1/4 Teaspoon Salt and Pepper

2 Tablespoons Cold Butter

1/3 Cup Milk

Extra Salt For Topping

Extra Flour for Dusting

Preheat oven to 375

In a food possessor add all dry ingredients, pulse to combined.  Cut up butter and add it to possessor, pulsing to combined butter.  Slowly drizzle in milk, pulsing until a dough comes together.  In a floured surface roll dough, using 1/4 of the dough at a time.  Cut in desired shape.  I cut in 2×3 inch pieces using a pastry cutter.  You can use a pizza cutter, sharp knife or a cookie cutter if desired.

Place on cookie sheet and bake for 15-20 minutes or until crackers are browned and crispy.  Take out of oven and sprinkle salt on crackers immediately.  Place crackers on cooling rack to cool.

Place cheese and crackers on serving dish and enjoy!
