It is the time of year for chives! Chives are one of the first signs of spring, when chives start to pop out of the ground, it makes me happy. It’s the sign of warm weather and warmer weather to come! I am always looking for new ways to utilizes all my chives, this recipe is easy and to me, screams spring! This is a perfect spring time recipe, light and delicious, served with a salad makes a perfect breakfast, brunch , lunch or light dinner. A nice cold glass of Prosecco is a perfect addition.
Brie Cheese and Chive Quiche
1 Cup Half and Half
1/8 Teaspoon Nutmeg
Salt and Pepper to Taste
1 Cups Shredded Brie Cheese
1 Cup Shredded Three Cheese Blend
1 Large Bunch Fresh Chives
Butter for Greasing Pan
Dusting of Flour
Preheat Oven to 350 degrees.
Grease a large quiche or oven safe dish with butter then dust with flour, shaking off excess.
Wash chives thoroughly, then cut chives to fit baking dish.
In a large bowl, whisk eggs, half and half, nutmeg, salt and pepper. Pour half the egg mixture into baking dish, place brie cheese, top with chives then half of the cheese blend cheese. Pour in the remaining egg mixture. Top quiche with remaining cheese blend cheese.
Bake in preheated oven for 1 hour, or until set. Place foil over top if the top gets too brown. Remove from oven and let cool slightly. Remove from baking dish by set a plate on top and over turn, let quiche fall onto plate. Serve and enjoy!!
