One of our favorite cookies, and definitely in our Holiday Cookie Collection.
2 Sticks Unsalted Butter-Room Temperature-Plus 2 Tablespoons
1/2 Cup Powdered Sugar
1/2 Teaspoon Salt
1 Tablespoon Rum
2 Cups Flour
6 Ounces Chocolate
In mixer, beat 2 sticks of butter, sugar and salt until pale and fluffy. Beat in rum then flour until well combined. Cover and refrigerate for at least an hour.
Preheat oven to 350 degrees. Scoop dough by the teaspoonful and roll into uniform size balls. Place on ungreased cookie sheet. Bake for 10-12 minutes until firm not brown. Place cookies on wire rack to cool completely.
Place chocolate and 2 tablespoon butter in to a double boiler to melt chocolate mixing to combine. Take off heat and let cool slightly. Place a small amount of chocolate on the bottom of one cookie, and then sandwich the chocolate with another cookie. Continue until all cookies and chocolate are used. Let cool on wire rack. Serve.
