Do you ever wonder what to do with left over mashed or smashed potatoes? Make potato pancakes of course.
Well how about stuffed potato pancakes! Crispy crunchy outside with a creamy potato inside, is the appeal to a potato pancake. Stuffed with cheese and broccoli….umm….can you say.…more please!
Stuffed Potato Pancakes
3 Cups Mashed/Smashed Potatoes
3/4 Cup Shredded Cheddar Cheese
3/4 Cup Cooked Broccoli-Chopped
Salt and Pepper To Taste
1 Cup Bread Crumbs
Drizzle Olive Oil
Take a preferred amount of potatoes and form into pancake. Top with broccoli and then cheese. Cover with more potatoes to cover filling, pressing together to form pancake. Salt and pepper each side of pancake.
In bowl add egg and milk then mix. In separate bowl add bread crumbs. Careful dip potato pancake into egg mixture then coat with bread crumbs. Continue, until all pancakes are made.
In large skillet, drizzle with oil and heat up frying pan. Fry pancakes until brown on both sides and middle is warm and cheese is melted. Serve. Enjoy<3
*Left overs are usually cold. The Pancakes hold together better if they are chilled first.
