I call this Drop soup, because I just drop any vegetables that I have in the house. This soup is a healthy quick easy recipe, which does not skimp on comfort or flavor!
Vegetable Drop Soup
Drizzle Olive Oil
1 Large Onion –Diced
2 Carrots _ Diced
2 Celery Stalks –Diced
3 Clove Garlic-Diced
1-14.5 Ounce Can Diced Tomatoes
8 Cups Vegetable Broth
1-15.5 Ounce Can Cannellini Beans
½ Pound Cooked Broccoli
¼ Pound Cooked Peas
1 Teaspoon Basil
1 Teaspoon Parsley
Salt and Pepper to Taste
½ Pound Pasta- Your Favorite
In large soup pot drizzle with olive oil and sauté onion, carrots and celery until soft and not brown. Add in garlic and cook for another minute or so then add tomatoes and cook until most of the juices are evaporated. Pour in broth, beans, broccoli and peas. Season with basil, parsley and salt and pepper to taste. Let soup simmer for about 25-30 minutes.
Meanwhile in a separate pot with boiling salted water, cook pasta according to package directions. Drain and using a small amount of broth or olive oil to coat pasta so it will not stick together.
In bowl, place desired amount of pasta and top with desired amount of soup. Enjoy<3
*I store extra soup and pasta separately to avoid the pasta soaking up all the broth.
