It’s called drunken spaghetti because the spaghetti is cooked in a bath of red wine, it absorbs the wine and its beautiful color…..making a delicious dish and delicious appearance! Bella’s Drunken Spaghetti
1 Pound Spaghetti
¼ Cup Olive Oil
2 Tablespoons Butter
1 Onion -Chopped
3 Clove Garlic-Chopped
Pinch Red Pepper Flakes
1 -14.5 Can Diced Tomatoes
2 1/2 Cups Drinkable Dry Red Wine
2 Tablespoons Parsley- Chopped
Salt and Pepper to Taste
½ Cup Grated Pecorino Romano Cheese
In large pot with salted boiling water, cook spaghetti until underdone less then Al dente.
Meanwhile; in large sauté pan add oil, butter and cook onion on low until onions are soft, then add garlic and red pepper flakes, and continue to cook for a couple more minutes. Add tomatoes and red wine then simmer until reduced by ¼.
Add drained pasta to sauté pan and let pasta cook the remaining time in the sauté pan with the wine mixture. The pasta with absorb the wine mixture and let out starch, thickening the sauce. In the last couple of minutes of cooking add parsley and salt and pepper to taste. Place pasta on serving dish and sprinkle with a generous amount of pecorino romano cheese. Serve. Enjoy<3
