Creamy Chicken Scampi

My daughter and I made this together last night.  Two great minds in the kitchen, it was bound to be good.  It was a great time, a great meal and it was made from the heart.  That’s where the best recipes come from. 

Creamy Chicken Scampi

For Chicken:

3 Boneless Chicken Breasts

Salt and Pepper

½ Cup Flour

1/2 Cup Olive Oil

For Scampi:

1 Pound Roasted Garlic & Parsley Linguini

 Olive Oil -If Needed

2 Tablespoons Butter

4 Cloves Garlic-Diced

1 Cup White Wine

1 1/2 Cups Chicken Broth

Pinch Red Pepper Flakes

Pinch Basil

1 Teaspoon Mustard

Salt and Pepper to Taste

1 – 1/2 Cups Cream

1 Tablespoon Parsley

Pecorino Romano Cheese -Grated

In large pot of boiling salted water, cook pasta according to package directions.

Take chicken and cut breast length wise to make cutlets.  Salt and pepper both sides of all the cutlets.  Place flour on plate and coat each cutlet with flour.

In large skillet on medium high heat, add oil and fry chicken a couple of minutes on each side and set aside.  In same skillet add more oil if needed and butter add the garlic and cook a couple of minutes.  Add wine, broth, pepper flakes, basil, mustard and salt and pepper to taste.  Simmer for 10 minutes.

Meanwhile on very low heat, heat up cream in a small sauce pan.  When milk is warmed up, whisk into garlic sauce.  Return chicken to pan and simmer 15 minutes or until chicken is cooked through.  In the last couple of minutes of cooking, sprinkle parsley over chicken.

Drain linguini and place in serving dish, pour garlic sauce over pasta and top with chicken.  Sprinkle with pecorino romano cheese and serve.  Enjoy<3
