Peanut Butter Bread

I wanted to make something my girls for a long car ride.  They both love peanut butter, so I decided to make bread.  I sliced it up for them, so it would be easy for them to handle while driving.  They loved it.  They told me, what they didn’t eat on the way, they toasted the next day for breakfast and it was so good.

Try it with just jelly, for a peanut butter and jelly sandwich.   Make French toast and melt jelly for the syrup.  The possibilities are endless.  Or enjoy just as it is.

Peanut Butter Bread

1 Stick Butter- Room Temp

1 Cups Sugar

2 Eggs

1 Cup Peanut Butter

1 ¼ Cups Flour

¾ Cup Oats

Pinch Salt

3 Teaspoons Baking Powder

3/4 Cup Milk

¼ Cup Sliced Almonds

1 Teaspoon Vanilla Extract

½ Cup Peanut Butter Chips-Optional

Preheat oven to 300 Degrees.

In mixer, cream butter while slowly adding sugar and mix until light and airy, and then add eggs one at a time.  Add peanut butter and mix until just blended.

 In large bowl mix together flour, oats, salt and baking powder.  Mix dry ingredients and milk into butter mixture a little at a time, alternating with each.  Starting with flour and ending with flour.  Add extract and fold in almonds.

Pour batter into a greased 9 x 5.5 inch loaf pan.  Bake for about 1hour 30 minutes or until toothpick comes out clean. Let cool on wire rack in pan for 15 minutes.  Loosen sides with butter knife along edges, to ensure it comes out of pan. Take out of pan, sprinkle with peanut butter chips if desired and let cool on wire rack completely.  Serve.  Enjoy<3
