Artichokes w/ Pepperoncini Dipping Sauce

 

Rule of thumb,  Always have a lemon nearby when cutting into an artichoke.  Rubbing the cut portions of the artichoke with a lemon prevents the artichoke from turning brown.  It’s not very appetizing to have a brown artichoke. 

Who would have thought to combine the flavors of an artichoke and pepperoncini…ME!  It is so delicious to. It ends up it is the perfect dipping sauce for an artichoke.  The soft consistency of the artichoke combined with the slightly tangy and spicy peppers…..yum. 

This is my family’s favorite artichoke recipe!   When my hubby is done with dinner he always…. and I mean always says thank you babe that was good.  If the meal is real good I will hear “it’s good” before he leaves the table, so, on that scale, I believe he gave this recipe a five star rating!! 

The Hubby likes his dipping sauce hot, so I add some pepperoncini seeds to his sauce. My honey is bald, so when I see beads of sweat forming on his head…I know I have done my job well.  So really this is a win -win recipe.

Artichokes w/ Pepperoncini Dipping Sauce

2 Artichokes

1 Lemon

½ Tablespoon Olive Oil

2 Garlic Gloves- minced

5-6 Pepperoncini Peppers-diced

1 Teaspoon Flour

¼ Cup Pepperoncini Juice

¼ Cup White Wine

Pinch Salt and Pepper

1 Tablespoon Butter

Wash Artichokes thoroughly.  Cut of stem off bottom of artichoke, with scissors, snip off the tip of each artichoke leaf, then cut the tip of the artichoke top off.  Cut your lemon in half and rub the open part of the lemon on cut areas of artichoke. 

In large pot add about an inch of water and the juice of ½ Lemon into pot, place in steamer basket.  Place Artichokes into steamer and place on cover, simmer on medium- low for about an hour to an hour and a half depending on the size of artichoke.  The artichoke is done when leaves pull out easily. 

Meanwhile; in a small sauce pot on medium- low heat, add oil, garlic and peppers.  Sauté for a couple of minutes then add flour, stir in flour and cook for another minute.  Stir in pepperoncini juice, wine, salt and pepper, bring to boil then simmer on low for about 7-10 minutes.  Stir in butter until melted.

Remove artichokes from steamer and serve with pepperoncini sauce for dipping.  Serve.  Enjoy<3
