Potato Leek Soup

My mother came to me one day and said “ you know, I have never tasted a leek are they good? “ Really!?  I got right on that!  Everyone should have had the pleasure of tasting a wonderful, perfectly delicious leek.  So mom loves soup, so leek soup it was going to be.  This story has a very happy ending, everyone in my family has now tried a leek and Im happy to say, everyone now shares my passion and love for leeks!  Mom even asked for the recipe…

Potato Leek Soup

1 Tablespoon Olive Oil

2 Cloves Garlic-Diced

1 Leek-Cleaned a Sliced

1 Carrot-Diced

1 Celery Stalk-Diced

3- 14.5 Ounce Can Vegetable Broth

1 Teaspoon Fresh Rosemary- Finely Chopped

1 Teaspoon Fresh Thyme

3 Potatoes-Peeled and Diced

Salt and Pepper to Taste

Cut leeks length wise and wash leek thoroughly, then slice the white and light colored green part of the leek.  In a large pot add olive oil and sauté on medium low heat garlic, leek, carrot and celery until vegetables are soft.

Add in broth, rosemary, thyme, potatoes, salt and pepper.  Simmer for 20 minutes.  Using an emulsion blender or blender, blend soup until almost all smooth.  Serve.  Enjoy<3
