It has been a busy time for me.  I have been sharing some of my old favorite recipes lately because of it.  We are in the middle of doing our Master Bathroom and making an office space for me!  Yea!

Office space sounds simple right…wrong.  I am taking over the formal living room and making it my office.  The kids (around 16 of them – ages ranging from 11-25) are not going to happy about it either.  When we have family get togethers, all the kids used to come to that room (the Quiet Room they all called it) to get away from the adults. True story, we have awesome parties!  When our family gets together it is loud and full of food and fun!  But the space will be used more, as an office ,sorry kids.

Now the quiet room really is a quiet room, the furniture has been relocated to the family room, but then the colors didn’t match; so total redo of the family room too!  So now we have three major projects going on at the same time and with all that..

My baby girl just turned 21!!!  Wow amazing how fast that came.  It seems like yesterday I was sending her off to school and driving her to girl scouts.  I am so proud of the women she has become; she makes her mom so proud.  So 21 is a big deal!

With the help of her friends, we had a surprise party for her.  We took her out so she could order her first drink at a bar.  I know it was her first drink, because that is what she said while I was standing there..cough cough.

This was to get her out of the house so her friends could come and surprise her!

I made many of her favorite Vegetarian appetizers.  Pizza, Brie Raspberry Bites, Chive Apple Ceddar Bites, (Her Favorite) Rice Balls.

The Birthday Girl’s favorite dessert is Tiramisu.  So of course I made it for her!

Birthday Tiramisu Trifle

7 Egg Yolks

1/4 Cup Sugar

1 Cup Amaretto

1 1/2 Cups Brewed Espresso or Strong Black Coffee

16 Ounces Mascarpone Cheese

25-30 Italian Lady Fingers

Semi Sweet Chocolate- Grated

With electric mixer on high with whisk attachment, whisk egg yolks and sugar together for about five minutes or until thick and creamy.  Add in 1/4 cup of the amaretto, 1/4 of the espresso and mascarpone cheese, whisk on medium speed until smooth.

In shallow bowl mix together the reaming amaretto and espresso, dip lady fingers into the mixture.  Line the bottom of the trifle dish with soaked lady fingers and top with 1/3 of the cream, continue to layer, with lady fingers then cream, making three layers.

Grate chocolate on top, cover with plastic wrap and refrigerate for 4 hours.  Serve.  Enjoy<3
